🍗 Easy Oven-Baked Chicken with Herbs and Vegetables
If you’re looking for a simple, healthy, and flavorful chicken recipe, this one is perfect for you! It’s easy to make, requires only basic ingredients, and gives you a delicious meal that feels homemade and comforting. The combination of tender chicken, aromatic herbs, and roasted vegetables makes this dish both satisfying and full of natural flavor.
Ingredients:
-
4 pieces of chicken (thighs or breasts, as you prefer)
-
2 medium potatoes, cut into cubes
-
1 large carrot, sliced
-
1 onion, cut into thin slices
-
2 cloves of garlic, minced
-
3 tablespoons olive oil
-
1 teaspoon salt
-
½ teaspoon black pepper
-
1 teaspoon paprika
-
½ teaspoon turmeric (optional, for color)
-
1 teaspoon dried thyme or oregano
-
Juice of half a lemon
-
Fresh parsley for garnish
Instructions:
-
Prepare the ingredients:
Wash the chicken pieces well and pat them dry with a paper towel. Peel and cut the potatoes and carrot into medium-sized pieces so they cook evenly. Slice the onion and mince the garlic. -
Make the marinade:
In a large bowl, mix olive oil, lemon juice, salt, pepper, paprika, turmeric, thyme, and garlic. Stir well until you get a smooth mixture. -
Season the chicken:
Add the chicken pieces to the bowl and coat them well with the marinade. Use your hands or a spoon to make sure the seasoning covers every side. Let it rest for 10–15 minutes to absorb the flavors. -
Add the vegetables:
Place the potato cubes, carrot slices, and onion in a baking dish. Drizzle a little olive oil on top, and sprinkle some salt and pepper. Then, place the marinated chicken pieces on top of the vegetables. -
Bake in the oven:
Preheat your oven to 200°C (400°F). Cover the baking dish with foil and bake for about 35 minutes. After that, remove the foil and bake for another 15–20 minutes until the chicken turns golden brown and the vegetables are tender. -
Check for doneness:
To make sure your chicken is cooked, cut one piece — the inside should be white and juicy, not pink. The vegetables should be soft and slightly caramelized around the edges. -
Serve and enjoy:
Remove the baking dish from the oven, sprinkle with fresh parsley, and serve hot. This dish goes perfectly with rice, bread, or a light salad on the side.
Tips for the Best Flavor:
-
You can add other vegetables like bell peppers, zucchini, or cherry tomatoes.
-
For a spicier version, add a pinch of chili flakes or harissa.
-
Marinating the chicken longer (up to 1 hour) will make it even more flavorful.
